Banana pancakes

Around 12 pancakes – 15 minutes of preparation.
- 2 Tbsp chia seeds
- 200 g oat flakes
- 2 ripe bananas
(the riper the better) - 45 ml maple syrup
- 2 dsp melted coconut oil
- 1 pinch of salt
- 1 tsp vanilla essence
Place the chia seeds in a bowl and cover with water (approx. 170 ml). Leave to soak for 15 to 20 minutes until the preparation reaches a gelatinous consistency.
Place all the ingredients (except the chia seeds) in a blender with 100 ml of water and mix to form a paste. Pour the paste into a bowl and add the chia seeds. Mix well. Place a little coconut oil in a frying pan and pour in two tablespoons of the mixture per pancake. Brown over a moderate heat. Repeat until you have used all the mixture.
Pro tip: serve the pancakes with maple syrup and blueberries or a little cashew or any nut butter for a guilt-free treat.
