Gazpacho
Vegan savoury
For 4 people – 10 minutes of preparation
- 1 whole cucumber
- Juice of 1 lemon
- 1 avocado
- 1 clove garlic
- 1 or 2 generous handfuls of mint
- Salt and pepper
- 3 dsp olive oil
Mix all the ingredients together in a blender. And that’s it! If the preparation is too thick, add water until you get the consistency you want. Personally, I love the texture without water!
Pro tip: delicious as an appetiser, this gazpacho can be served in glasses garnished with a mint leaf or a few toasted pine nuts.
