Light mango and pineapple mousse

Vegan sweet

For 4 people – 5 minutes of preparation (that’s all!)

  • 80 g dried mango
  • 50 g dried pineapple
  • 30 g cashew nuts (1 handful)

Soak the dried mango and pineapple with the cashew nuts in water overnight. The next morning, mix it all together in a blender until it forms a smooth mousse. Add water if the result is too thick. The consistency should be creamy and fairly thick.

When it comes to toppings, give free rein to your imagination: fresh fruit (blueberries, raspberries, kiwi), homemade granola (see p.), grated coconut… the sky’s the limit!

Pro tip: you can also make this mousse with fresh or frozen fruit, adding a banana, a little water and a handful of cashew nuts.
